This Copycat Olive Garden Chicken Scampi is a popular dish that you can make at home. This dish consists of Creamy Pasta and chicken with bell peppers and red onion. This recipe is a quick and easy version!

If you love Olive Garden’s Chicken Scampi, then this recipe is for you! I found out that scampi means shrimp, but this dish has chicken in it? I am not going to complain because I love this dish so very much!
How to make Olive Garden Chicken Scampi
Recipe Ingredients
- Chicken – Chicken breasts or chciken tenders.
- Seasonings – Garlic, basil, oregano, parsley and salt and pepper. Butter is also added to add more flavor to this dish for chicken breasts can be boring.
- Vegetables – Red onion and red and green bell peppers.
- Heavy Cream – This is added at the end of the cooking time.
Step-by-Step Directions
Step One – In my slow cooker, I cookthe chicken with chicken broth, garlic, seasonings, and butter (for more flavor) for 7 hours on low. WAIT TO ADD THE BELL PEPPERS. I add the bell peppers to the last hour of cooking. Bell peppers cook very fast once the slow cooker is hot.
Step Two – After that cooking time is up, add the sliced bell peppers and cook for one more hour.
Step Three – Right before the cooking time is up, cook your noodles on the stovetop. Shred the chicken with two forks and add heavy cream. Drain them well and add to the chicken, veggies, and sauce in the slow cooker; stir in parmesan cheese.

Scampi sauce is usually made of butter and garlic, but for this recipe, the addition of heavy cream makes it even more decadent.

Mozzarella – Make this extra cheesy by adding mozzarella cheese on top instead of parmesan. 1.5 cups of shredded mozzarella is the perfect amount.
Spicy – Add a 1/4 teaspoon of red pepper flakes for a spicy kick.
Mushroom – Mushrooms are a great addition to this meal, making it even heartier.
Can I add white wine?
Add a 1/2 cup of white wine to your chicken scampi while it cooks; omit a 1/2 cup of chicken broth.

Can I meal prep chicken scampi?
You can, though you will have to not add the peppers, cream, pasta, and cheese to your ziplock bag. You can still freeze the chicken, seasonings, butter, and onions! Add them into a ziplock bag and freeze for up to 3 months. Add the thawed contents of the bag to a slow cooker and continue with the recipe.
All love this meal in my house! My familyloves pasta,and pasta is the one meal I can count on my 12-year old eating. She would love to eat Sponge Bob Mac & Cheese every night; this meal is a nice change from that! I alsolove that this meal is a fraction of the cost of dining out.

Ingredients:
- 1 1/2 lbs. boneless skinless chicken breasts
- 1 cup chicken broth
- 1 cup sliced red onion
- 1 garlic clove minced
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 1 tsp. dried parsley
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbsp. salted butter
- 2 bell peppers sliced (these get added towards the end)
- 1 cup heavy cream add at the end
- 1/2 lb. angel hair or spaghetti pasta cooked according to package directions
- 1/2 cup grated parmesan cheese plus more for serving

Instructions:
Place the chicken, chicken broth, onion, garlic, basil, oregano, parsley, salt, pepper and butter into the slow cooker.
Cover and cook on LOW for 7 hours. Add the bell peppers after the 7 hours is up, and cook for 1 hour more.
Shred the chicken with 2 forks.
Add the heavy cream, stir. Add the cooked and drained pasta and the 1/2 cup of parmesan cheese. Stir gently.
Serve with additional cheese if desired.
