Roasted Green Beans: Ingredients & Substitutions

  • Green beans. You can use fresh or frozen beans. I give instructions on how to use frozen beans in the post and recipe card. I’ve done this often with great results.
  • Olive oil. Any neutral oil works well, I suggest avocado oil or canola oil as substitutions for olive oil.
  • Smoked paprika. I love the smoky flavor of smoked paprika, but you can use regular paprika if desired.
  • Minced garlic. you can substitute ½ tsp garlic powder for the minced garlic. You can also use jarred or freshly chopped garlic depending on your preference.

FAQs

Why are my green beans not crispy? ›

Make sure you spread out the green beans. They can overlap some, but you want as much surface area exposed to the heat as possible for crispness. Along the same lines, you can technically double this recipe, but remember that the more you make at once, the less crispy the green beans will be.

What is the minimum temperature for cooked green beans? ›

Heat processed, ready-to-eat foods from a package or can, such as canned green beans or prepackaged breakfast burritos, to an internal temperature of at least 135°F for 15 seconds for hot holding.

Why are my cooked green beans tough? ›

One reason beans are fibrous, tough, and stringy may simply be that they are picked past their prime. Pod diameter, NOT length is the best indicator for harvesting beans, and freshness can be confirmed by an audible snap when the bean is broken.

What makes green beans taste better? ›

I added some sliced onion sautéed along with the green beans, added some garlic paste from the tube (Gourmet Garden®), some freshly-ground black pepper, and a healthy sprinkle of lemon pepper. Wow, so simple and yet soooo delicious.

Why add baking soda to water when cooking green beans? ›

Adding baking soda to boiling water before adding the green beans prevents the beans from turning brown as they cook. The baking soda also helps soften the beans so they are not stringy.

Should green beans be steamed or boiled? ›

They can be boiled or microwaved, which is efficient, but I find that both methods create a very fine line between cooked vs. overcooked beans. Green beans can also be roasted, which is a great way to give them some texture and depth of flavor. However, my favorite way to cook green beans, by far, is to steam them.

What is the best way to cook green vegetables so they stay firm and bright? ›

Whether you're cooking green beans, spinach, broccoli, brussels sprouts or peas, the goal is for them cooked through, but still firm enough to slightly resist your bite. That's tender-crisp. The best way to achieve this (and keep your veggies green) is by blanching, roasting or sautéing them.

How do you cook Jamie Oliver green beans? ›

Put a pan of salted water on to boil. Meanwhile, trim the the beans. Once the water is boiling, steam or boil the beans until tender. Drain well, then tip the cooked beans into the bowl with your dressing and toss everything together, making sure all the beans get coated.

How to infuse flavor into green beans? ›

Soy sauce is one of the easiest answers to how to flavor green beans. You can throw in some of this soy sauce, sesame oil, olive oil, ginger, and garlic and pan fry until glassy and green and you may never want to eat green beans any other way again.
