COOK TIME

10 minutes

SERVES

4

Ingredients

600g (1 lb 5 oz) chicken breast, cut into 1cm (⅜ inch) thick slice

1 egg white, beaten well

2 tsp Chinese Shaoxing wine*

3 tsp soy sauce

1 tsp sesame oil

1½ tsp cornflour (cornstarch)

sea salt

1 lemon, thinly sliced

2 spring onions (scallions), trimmed and very finely sliced on the diagonal

Coating

½ cup cornflour (cornstarch)

1 tsp salt

1 tsp baking powder

Lemon sauce

½ cup chicken stock

Steps

  • Marion’s Best Lemon Chicken recipe | Marion's Kitchen (8)

Add the chicken, egg white, Shaoxing wine, soy sauce, sesame oil and cornflour to a large bowl and mix well to combine. Set aside to marinate for 10 minutes.

  • Marion’s Best Lemon Chicken recipe | Marion's Kitchen (9)

Meanwhile, for the coating, whisk the flour, cornflour, salt and baking power in a bowl. Fill a saucepan or wok to about one-third capacity with vegetable oil and place over medium-high heat. Heat oil to 180°C (350°F), or until a wooden spoon dipped into the oil produces lots of bubbles.

  • Marion’s Best Lemon Chicken recipe | Marion's Kitchen (10)

While the oil heats, let’s make the lemon sauce. Combine the stock, lemon juice, sugar, rice vinegar, Shadowing wine and lemon zest in a small saucepan. Bring to a simmer over medium heat, then reduce the heat to medium-low. Add the cornflour mixture to the sauce and simmer for 1 minute or until thickened. Keep warm.

  • Marion’s Best Lemon Chicken recipe | Marion's Kitchen (11)

Working in two batches, add the chicken to the coating mixture, tossing it well to coat each piece. Cook half the chicken in the oil and cook for 4-5 minutes until crisp, golden and cooked through. Using a slotted spoon, transfer the chicken to a tray lined with baking paper, and sprinkle with salt. Repeat with the remaining chicken.

  • Marion’s Best Lemon Chicken recipe | Marion's Kitchen (12)

Arrange the lemon slices on a serving platter, then pile the chicken on top. Drizzle with the hot lemon sauce, scatter with the spring onion, then serve.

    Notes:

    – Chinese Shaoxing wine is a type of cooking rice wine. It’s available in the Asian aisle of some major supermarkets or from an Asian grocery store. If you’d rather leave it out, simply replace with chicken stock.

What does lemon chicken taste like?

Lemon chicken is a highly popular Chinese recipe that you’ll find on many restaurant and takeaway menus. Our version of Chinese lemon chicken features boneless and skinless chicken breast that’s dredged in a coating, then fried until it’s golden and crispy. Lemon sauce gets drizzled on top, which is a tangy mix of sweet and sour.

              FAQs

What does Ina Garten serve with her lemon chicken? ›

The sauce has garlic, thyme and lemon, and has so much flavor," Garten says. "And the whole thing takes like 5 minutes to put together... The best thing about this is that it makes the chicken and the sauce at the same time." Serve it over rice or quinoa, and the grains can absorb all of the sauce, Garten recommends.

What does adding lemon juice to chicken do? ›

Here's why: Lemon juice helps to tenderize meat, but when left for too long, it will break down the proteins too much, making the meat tough and rubbery… sometimes even mushy. So, if you want tender, juicy, and flavorful chicken, make sure to only marinate the chicken for 2-3 hours.

Mix well with your hands and let marinate for at least 20 minutes. Next, mix the sauce by combining chicken stock, lemon juice, lemon zest, sugar, honey, distilled white vinegar, and cornstarch. I always like to premix my sauce to have it ready to go during the fast cooking process.

              Lemon Chicken

This is entry level Chinese food at it's finest, mostly because it's not really Chinese food. You can find variations of this dish across Chinese restaurants in North America, Australia and the UK, but just about the only place you'll find it in China is in Hong Kong, because—as I said above—white people.

What are the benefits of marinating chicken with lemon? ›

[5] found that chicken breast meat marinated in lemon juice had higher juiciness and lower hardness, but was inferior in overall appearance compared to meat marinated in grapefruit juice and citric acid.

How long can chicken sit in lemon marinade? ›

Most recipes for marinating meat and poultry recommend six hours up to 24 hours. It is safe to keep the food in the marinade longer, but after two days it is possible that the marinade can start to break down the fibers of the meat, causing it to become mushy.

Should you wash chicken before cooking? ›

From a food safety perspective, washing raw poultry, beef, pork, lamb or veal before cooking it is not recommended as the safest method. If you wash meat or poultry, some bacteria can be splashed on the surfaces of your kitchen, which can make you sick if not properly cleaned and sanitized.

What does rubbing lemon on chicken do? ›

Like pickling, smoking, and curing, the practice of rinsing chicken with lemon juice probably started out as a way to neutralize any off-aromas in the meat and cut down on bacteria.

The lemon also denatures proteins on the surface of the chicken, similar to how citrus "cooks" fish in ceviche. This will impart a tenderizing effect, making the chicken softer and juicier as a bonus. Vinegar also works as a cleaning agent due to its similar acidity.

Why is chicken from Chinese restaurants so tender? ›

In Chinese cooking, proteins like beef, pork or chicken are velveted first before stir-frying them. There are several ways to velvet, but at its most basic level, it involves marinating meat with at least one ingredient that will make it alkaline. This is what tenderizes the meat, especially cheaper, tougher cuts.
