Although, you can roll out the batter immediately, but I prefer to chill it I the fridge for about 45-60 minutes. Then roll out the dough and cut desired shapes.

When ready to bake the cookies, preheat the oven to 325 F and line baking sheets with parchment paper. Then, roll the dough 1/3- 1/2 inch thick and cut in desired shapes. Using a pizza cuter or sharp knife cut rectangles. But, if you want to make triangles like “pizza cuts” you’ll need 2 bowl. I used 7.5-inch bowl to cut out large circle. Next, use smaller (6-inch) bowl and lightly press onto circle to make the rim. Use knife to make dents over the rim. With a wooden skewer make dots. Finally, arrange the cookies onto baking sheet leaving at least 1-inch space between and bake at 325 F until the edges are lightly golden brown (18-20 minutes).

Shortbread cookies are baked at a low temperature (325 F) to avoid browning. When cooked, they are nearly white, or a light golden brown. They may be crumbly right after baking but they will become firmer after cooling.

I like to place cookies in the freezer 5 minutes before baking to help them keep the shape during baking, but you can skip this step. If you chill the cookies in the freezer before baking bake time will be about 22-25 minutes.

What is the mistake in making shortbread? ›

The most common mistakes when making shortbread are over-working the dough, and incorporating too much flour.

What's the difference between Scottish shortbread and regular shortbread? ›

Traditional Scottish shortbread is a simple recipe made with sugar, butter, flour, and salt. Other shortbread styles will include leavening agents like baking powder and baking soda, which makes them crisp instead of crumbly like traditional Scottish shortbread.

What is the difference between a butter cookie and a shortbread cookie? ›

Due to differing ratios, shortbread cookies are crumblier and more "sandy" than butter cookies, which are firm and solid enough to be iced. This mostly has to do with flour and eggs. Shortbread doesn't use eggs, while butter cookies do, making butter cookie dough more pliable and robust than its shortbread counterpart.

What happens if you don't chill shortbread before baking? ›

If the butter in the dough starts to melt too soon in the hot oven, the cookies will likely spread, losing their delicate shape and becoming tough. Not chilling the dough could also cause the cookies to come out heavy and oily due to the melted butter saturating the dough too early.

Should you refrigerate shortbread dough before baking? ›

As Leiths also recommend chilling the dough before baking, although only for 15 minutes, I make another batch of their recipe with soft butter, stick it straight in the oven without passing the fridge, and end up with thinner, crunchier biscuits – presumably because the mixture spreads as the fat melts.

How do Scottish people eat shortbread? ›

Form either into a round or into fingers and prick with a fork.

What is shortbread called in Scotland? ›

Shortbread or shortie is a traditional Scottish biscuit usually made from one part white sugar, two parts butter, and three to four parts plain wheat flour. Shortbread does not contain any leavening, such as baking powder or baking soda.

Why use unsalted butter in shortbread? ›

Unsalted butter is most commonly called for in baking recipes. Unsalted butter has a very neutral, creamy flavor—a great base for many baked goods. In baking, precise measurements are key for achieving the right flavor and texture. This even extends to small amounts of ingredients like salt.

Why do you put cornstarch in shortbread? ›

Cornstarch provides the shortbread with structure, but its biggest job is keeping the cookies extra soft, tender, and light. I love adding a small amount to chocolate chip cookies too. Optional Coarse Sugar Topping: For an optional sparkly crunch on your shortbread wedges, add a sprinkle of coarse sugar before baking.

Are chessmen butter cookies shortbread? ›

To make a copycat version of Chessmen cookies at home, the recipe is a simple butter cookie cut out in a special shape. A butter cookie is slightly different from shortbread but with a higher ratio of sugar to butter. This allows a butter cookie to hold its shape rather than having a tendency to crumble.

What is shortcake vs shortbread? ›

Shortbread is similar to shortcake but doesn't include baking powder. Lots of rich butter gives shortbread a high fat content, resulting in a fine, crumbly texture. Shortcake and shortbread biscuits are delicious on their own, with fruit and cream, or simply topped with a delicate dusting of sugar.

What are the qualities of a good shortbread? ›

It's all in the quality of the ingredients. With such a short ingredient list, the quality makes a big difference. The perfect shortbread cookie should be crumbly, but not dry, buttery but not greasy and sweet but not sickly.

Is powdered sugar or granulated sugar better for shortbread? ›

Takeaway: look for recipes that use granulated sugar for a more crisp-style shortbread and powdered sugar for a more tender shortbread!

Should butter be cold when making shortbread? ›

Always start with cold butter straight from the refrigerator. This will keep the dough from warming up, making it greasy and difficult to roll out. If the dough does get soft or sticky as you're rolling or cutting it, just put it back in the refrigerator for 10-15 minutes to chill the butter.
